Honey-Mustard Chicken Pasta

This recipe was given to me at one of my bridal showers by a cousin.  I often double the recipe because it's a "cooking for two." It's a great recipe to sneak in those veggies that aren't always the favorite :)

1 cup uncooked bow tie pasta
2 bacon strips, diced
1/3 cup sliced fresh mushrooms
2 Tbsp. chopped onion
1 garlic clove, minced
1 cup diced cooked chicken
1/2 cup frozen peas, thawed
1/2 cup cream of chicken soup, undiluted
1/3 cup milk
1 Tbsp. prepared mustard
2 tsp. honey
1/2 tsp. dried parsley flakes
1/8 tsp. pepper                                                             
2 tsp. grated Parmesan cheese

Cook pasta; meanwhile in a large skillet, cook bacon over medium heat until crisp.  Remove bacon to paper towels.  Drain, reserving 1 Tbsp of drippings.  In drippings, saute mushrooms and onion until tender.  Add garlic, saute for 1 minute.  Stir in chicken and all remaining ingredients except Parmesan.  Cook and stir over medium heat until heated through.  Drain pasta; add to skillet and toss to coat.  Sprinkle with Parmesan cheese.


This year I made my first ever Easter dinner.  It was so fun!  Thankfully, the food turned out and even if it hadn't my parents and Mike's parents were good people to try it out on :)  I found most of my recipes from Taste of Home:
